How to Make Authentic Butter Chicken at Home

Butter chicken, also known as Murgh Makhani, is one of the most popular and beloved Indian dishes worldwide. This creamy, flavorful curry is a perfect combination of tender chicken, aromatic spices, and a rich, buttery tomato sauce. Here’s a step-by-step guide to making authentic butter chicken at home.

Ingredients

For the Marinade

  • 1 lb (450 g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt

For the Sauce

  • 3 tablespoons butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 large tomatoes, pureed (or 1 cup tomato puree)
  • 1 cup heavy cream
  • 1/2 cup water
  • 2 tablespoons sugar (optional)
  • 1 teaspoon fenugreek leaves (optional)
  • Fresh cilantro, chopped (for garnish)

For Cooking the Chicken

  • 2 tablespoons vegetable oil or ghee

Instructions

Step 1: Marinate the Chicken

  1. Combine Marinade Ingredients: In a large bowl, mix the yogurt, lemon juice, turmeric, cumin, coriander, chili powder, garam masala, and salt.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

Step 2: Cook the Chicken

  1. Heat the Oil: In a large skillet or pan, heat the vegetable oil or ghee over medium-high heat.
  2. Cook the Chicken: Add the marinated chicken pieces and cook until they are browned on all sides and cooked through, about 8-10 minutes. Remove the chicken from the pan and set aside.

Step 3: Prepare the Sauce

  1. Melt the Butter: In the same pan, melt the butter over medium heat.
  2. Cook the Onions: Add the finely chopped onions and cook until they turn golden brown, about 5-7 minutes.
  3. Add Garlic and Ginger: Add the minced garlic and ginger, and cook for another 2-3 minutes until fragrant.
  4. Spice it Up: Stir in the ground cumin, ground coriander, turmeric, garam masala, chili powder, paprika, and salt. Cook the spices for 1-2 minutes to release their flavors.
  5. Tomato Puree: Add the pureed tomatoes and cook until the mixture thickens and the oil begins to separate, about 10-15 minutes.
  6. Creamy Goodness: Stir in the heavy cream and water, and let the sauce simmer for 5 minutes. Add sugar if you prefer a slightly sweeter sauce.

Step 4: Combine Chicken and Sauce

  1. Add the Chicken: Return the cooked chicken to the pan, stirring to coat it well with the sauce.
  2. Simmer: Reduce the heat to low and let the chicken simmer in the sauce for another 10-15 minutes, allowing the flavors to meld together.
  3. Optional Touch: Crush the fenugreek leaves between your palms and sprinkle them into the curry for an extra layer of flavor.

Step 5: Garnish and Serve

  1. Garnish: Garnish the butter chicken with fresh chopped cilantro.
  2. Serve Hot: Serve your authentic butter chicken hot with basmati rice, naan, or roti.

Tips for Perfect Butter Chicken

  • Marination Time: Allowing the chicken to marinate overnight results in more flavorful and tender meat.
  • Balanced Spices: Adjust the spices according to your taste preference. Butter chicken should be rich and aromatic, but not overly spicy.
  • Creaminess: Heavy cream adds a luxurious texture to the sauce. For a lighter version, you can substitute with half-and-half or coconut milk.
  • Fenugreek Leaves: This optional ingredient adds a unique, authentic flavor to the dish. It can be found in Indian grocery stores or online.

By following these steps, you can make authentic butter chicken at home that rivals any restaurant version. Enjoy the rich, creamy, and flavorful experience of this classic Indian dish right in your own kitchen!
