Ingredients

For the Marinade

  • 1 lb (450 g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt

For the Sauce

  • 3 tablespoons butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 large tomatoes, pureed (or 1 cup tomato puree)
  • 1 cup heavy cream
  • 1/2 cup water
  • 2 tablespoons sugar (optional)
  • 1 teaspoon fenugreek leaves (optional)
  • Fresh cilantro, chopped (for garnish)

For Cooking the Chicken

  • 2 tablespoons vegetable oil or ghee

Step 1: Marinate the Chicken

  1. Combine Marinade Ingredients: In a large bowl, mix the yogurt, lemon juice, turmeric, cumin, coriander, chili powder, garam masala, and salt.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

Step 2: Cook the Chicken

  1. Heat the Oil: In a large skillet or pan, heat the vegetable oil or ghee over medium-high heat.
  2. Cook the Chicken: Add the marinated chicken pieces and cook until they are browned on all sides and cooked through, about 8-10 minutes. Remove the chicken from the pan and set aside.

  5. Tomato Puree: Add the pureed tomatoes and cook until the mixture thickens and the oil begins to separate, about 10-15 minutes.
  6. Creamy Goodness: Stir in the heavy cream and water, and let the sauce simmer for 5 minutes. Add sugar if you prefer a slightly sweeter sauce.

Step 4: Combine Chicken and Sauce

  1. Add the Chicken: Return the cooked chicken to the pan, stirring to coat it well with the sauce.
  2. Simmer: Reduce the heat to low and let the chicken simmer in the sauce for another 10-15 minutes, allowing the flavors to meld together.
  3. Optional Touch: Crush the fenugreek leaves between your palms and sprinkle them into the curry for an extra layer of flavor.
